Ingredients

Taco Shells
- 6 wheat tortillas
- 0.5 c BBQ sauce
- 4 oz tortilla chips
Filling
- 5 oz vegan ground “beef”
- 3 tsp taco seasoning
- 1 Yellow bell pepper
- 1 Green bell pepper
- 1 Red bell pepper
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 1 Red onion
- 2 tbsp Olive oil
Topping
- 0.5 c pickled red onion
- 1 c Guacamole
- Hot sauce, optional

Directions

For the crispy tortilla shells
1. Crush the tortilla chips and dip the tortillas in BBQ sauce, then coat them in the tortilla chips.
2. Bake in the oven at 350 degrees F for 10 minutes until crispy.
For the filling
1. Sauté some vegan ground "beef" (or protein of your choice) with taco seasoning.
For the fajita vegetables
1. Thinly slice some red, green, and yellow bell peppers and a red onion, and sauté them with salt and pepper until soft.
Assembling the tacos
1. Fill your crispy tacos with the (vegan) ground beef and fajita vegetables, and top with guacamole and pickled red onions.
2. If you like it spicy, add some hot sauce for an extra kick.
