Ingredients

- 3 lb Yellow Baby Potatoes
- 0.5 c Extra virgin olive oil
- 0.25 c Kosher salt
- 0.5 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.5 tsp Paprika
- 0.25 tsp Black pepper
- 2 tbsp Fresh herbs, dill, rosemary, parsley for garnish
- Lemon, for garnish

Directions

1. Preheat oven to 450F.
2. Rinse potatoes of any excess dirt then fill in a large pot with cold water until fully submerged.
3. Add 1/4 cup kosher salt and bring to a simmer over medium high heat.
4. Simmer for 15-20 minutes or until fork tender and drain.
5. On a nonstick baking sheet, drizzle evenly with olive oil.
6. Add the potatoes to the baking sheet and use a flat object or pan to smash the potatoes to a 1/2" thickness.
7. Drizzle liberally with more olive oil and season with salt, pepper, garlic powder, onion powder, and paprika.
8. Roast the potatoes at 450F for 30-45 minutes until golden brown and crispy.
9. Season with salt to taste and garnish with fresh herbs and lemon.
10. Enjoy!
