Ingredients

Salmon Fillets
- 1.5 tbsp red curry paste
- 13.5 fl oz Coconut milk
- 0.25 c water
- 1 tbsp Fish sauce
- 5 clove Garlic, chopped
- 1 tsp Sugar
- lime zest
- 0.5 Lime, juiced
- Salt
- Pepper
Toppings
- Cilantro
- Thai chili
- Green onion
- Lime juice, fresh

Directions

Preparation of Ingredients
1. Chop fresh ingredients: garlic, cilantro, & Thai chili.
2. Clean & Pat dry the salmon then cut into desired pieces.
3. Season both sides of salmon with salt and pepper then set aside.
Cooking the Salmon
1. In a pan on medium high heat add 2-3 tbsp of oil.
2. Once the pan is nice & hot cook salmon skin side down for about 5-6 minutes. Let the skin get nice & crispy.
3. Remove salmon from the pan. Don’t worry, you’ll finish cooking it in the curry!
Preparing the Curry
1. In the same pan lower the heat & add the chopped garlic. Sauté for 1 minute then add red curry paste.
2. Cook paste down for about 2 minutes then add coconut milk, fish sauce, lime zest, lime juice, sugar, & water. Bring curry to a simmer and let it cook for about 1-2 minutes.
Finalizing the Dish
1. Put salmon fillets back in the pan skin side up & let it braise uncovered for about 10-12 minutes.
2. Serve with rice, cilantro, Thai chili, green onion & fresh lime juice & enjoy.
