Ingredients

- 2 c cooked rice
- 2 tbsp Rice vinegar
- 1 tbsp Sugar
- 1 tbsp Cornstarch, plus more for sprinkling
- 1 tsp Salt

Directions

1. In a large bowl, combine the cooked rice, rice vinegar, sugar, cornstarch, and salt.
2. Transfer to an 8 x11 baking dish lined with saran wrap and freeze for one hour.
3. Remove the rice with the saran wrap from the baking dish and cut into small rectangles, about 24 pieces.
4. Fry the pieces of rice on medium-high heat for 10-15 minutes per side, until golden and crispy.
5. Serve with any dipping sauce, like avocado crema.
