Ingredients

Pimento Cheese Balls
- 8 ounces Cream cheese, softened
- 1 c Sharp cheddar cheese, shredded
- 0.5 c pimentos
- 0.25 c Mayonnaise
- 0.25 tsp Garlic powder
- 0.25 tsp Onion powder
- 0.25 tsp Paprika
- Salt, to taste
- Black pepper, to taste
- 1 c all-purpose flour
- 2 Large eggs, beaten
- 2 c Breadcrumbs, panko or regular
- Vegetable oil, for frying

Directions

Preparing the Pimento Cheese Mixture
1. In a mixing bowl, combine the softened cream cheese, shredded sharp cheddar cheese, diced pimentos, mayonnaise, garlic powder, onion powder, paprika, salt, and black pepper.
2. Mix until all the ingredients are well combined. The mixture should be smooth and creamy.
3. Scoop small portions of the pimento cheese mixture and roll them into 1-inch balls. You can adjust the size based on your preference.
Coating the Pimento Cheese Balls
1. Place the all-purpose flour in one bowl, the beaten eggs in another bowl, and the breadcrumbs in a third bowl.
2. Roll each pimento cheese ball in the flour to coat lightly.
3. Dip the floured ball into the beaten eggs, allowing any excess to drip off.
4. Roll the egg-coated ball in the breadcrumbs, pressing the breadcrumbs onto the ball to ensure a good coating. Place the coated popper on a baking sheet lined with parchment paper.
5. Place the coated pimento cheese poppers in the refrigerator for about 30 minutes. This helps set the coating and prevents the filling from oozing out during frying.
Frying the Poppers
1. In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
2. Carefully add a few coated poppers to the hot oil using a slotted spoon or spider strainer. Be cautious to avoid overcrowding the pan.
3. Fry the poppers for about 2-3 minutes, or until they turn golden brown and crispy. Remove them with the slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
Serving the Poppers
1. Serve the crispy pimento cheese poppers immediately while they're hot.
2. You can enjoy them as is or with your choice of dipping sauce, such as Ranch dressing.
