Ingredients

Pork Hock or Leg
- 3.45 lbs pork hock or leg
- 1 head garlic
- 1 Red onion
- 4 Bay leaves
- 2 Star anise
- 1 tbsp peppercorns
- 1 tbsp Salt
- vinegar
- fish sauce and pepper
- Oil, to rub
Sauce
- 0.25 c Soy sauce
- 0.25 c vinegar
- 2 tbsp Sugar
- Pepper
- Garlic
- Red onion
- Thai chilis

Directions

1. Cut onion and crush garlic.
2. Boil pork hock on medium-high heat with garlic, onion, bay leaves, peppercorns, star anise, and salt for 1 hour or 1 hour 30 minutes, making sure it’s tender.
3. Let it cool down.
4. Coat in vinegar then fish sauce.
5. Let pork hock dry in fridge overnight or for 4 hours.
6. Take out of the fridge and rub a little oil on it to help it get crispy.
7. Air fry at 400 degrees for 15 minutes and then 350 degrees for another 15-20 minutes until desired crispiness.
8. Make sure to flip once in a while.
9. Make sauce using soy sauce, vinegar, pepper, sugar, garlic, red onion, and Thai chilis.
10. Enjoy!
