- 6 chicken pieces
- 1 White onion, diced
- 4 clove Garlic, crushed
- 2 tbsp sun dried tomatoes
- 1 tbsp Tomato paste
- 2 tbsp Creole Carnival Kick Seasoning
- 1 tsp Kosher salt
- 1 lb bow tie pasta
- 0.5 c pasta water
- 2 c half & half
- 0.5 stick Unsalted butter
- 1 c Spinach, chopped

Directions

Preparation
1. Preheat your oven to 350° F.
2. Start by cooking your pasta according to box instructions. Make sure you salt your pasta water with at least 1/3 cup of salt. Save the reserved pasta water for your sauce.
3. While you're cooking pasta, start your chicken.
4. Season your chicken front and back with your Creole seasoning.
5. In a skillet add olive oil, and one tablespoon of butter.
6. Melt until bubbly and then add in your chicken. Skin side down first.
7. Brown the chicken on each side and remove from the pan. Set aside.
8. In the same skillet, add your diced onions and cook for 1 minute. Next add tomato paste, sun dried tomatoes and cook for another 2 minutes then add in your garlic.
9. I add two more tablespoons of butter and once that is melted add in your half and half. And ½ c. Reserve pasta water.
10. Cook your sauce on medium heat until reduced by ½.
11. Add back in your spinach, pasta and chicken.
12. Place in the oven and cook until your chicken registers at 165° Fahrenheit.
13. Once your chicken is fully cooked through, serve it up and enjoy!
