Ingredients

- 1 large chicken breast
- 1 lb udon noodles
- 2 tbsp Canola oil
- 2 tbsp Unsalted butter
- 2 tbsp Garlic, minced
- 1 c half & half
- 0.5 tsp Salt
- 0.25 tsp Black pepper
Cajun Seasoning
- 1 tsp Salt
- 1 tsp Paprika, smoked
- 0.5 tsp Cayenne pepper, optional
- 0.5 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.5 tsp Oregano
- 0.5 tsp Thyme
- 0.25 tsp Black pepper

Directions

Make the cajun seasoning
1. Combine the listed ingredients. Alternatively, you can use store-bought cajun seasoning.
Prepare the chicken
1. Lightly pound the chicken to even thickness using a meat tenderizer.
2. Season both sides with the cajun seasoning.
3. Heat a skillet over medium-high heat, add oil and chicken breast.
4. Cook for about 5-6 minutes until brown, flip over and cook the other sides for the same amount of time.
5. Transfer out and let them rest for a few minutes before slicing.
Prepare the udon noodles
1. Bring a pot of water to boil and add udon noodles.
2. Let them soak in water for 3 minutes then gently stir to loosen them up.
Prepare the sauce
1. Heat on medium and add butter to the skillet.
2. Once butter is melted, add garlic and cook for 30 seconds until fragrant.
3. Turn the heat to low, add heavy cream along with salt and black pepper.
4. Let it come to a simmer and add the cooked udon noodles.
5. Continue simmering until the sauce thickens to your liking.
