Ingredients

- 0.5 lb Rigatoni
- 2 tbsp Butter
- 1 small shallot
- 4 clove Garlic, diced
- 0.25 C Tomato paste
- 0.5 C Heavy cream
- 0.5 C Parmesan cheese
- 0.25 C water, for sauce
- pinch Sugar
- Salt, to taste
- Pepper, to taste
- Red pepper flakes, to taste
- Basil, for topping

Directions

1. Cook pasta in salted boiling hot water. Set to the side.
2. Add butter, chopped shallots & garlic to a pan on low heat. Sauté for 1-2 minutes.
3. Add tomato paste and cook for 1-2 minutes.
4. Add 1/4 C of water to thin out and cook for another 1-2 minutes. Then add sugar, salt & pepper.
5. Add heavy cream, mix well & add more salt if needed.
6. Add cooked pasta, some pasta water, & mix well.
7. Add Parmesan cheese, red pepper flakes and mix until cheese is melted.
8. Once the pasta is ready, add more Parmesan cheese, basil, & flaky salt (if needed) on top.
