Ingredients

Polenta
- 5 c water, milk, or chicken stock or vegetable stock
- 1 c cornmeal/polenta
- Kosher salt
- 2 tbsp unsalted butter or extra-virgin olive oil
Mushrooms
- 1 lb Mushrooms, of your choice
- Oil, enough to coat your pan, plus additional if mushrooms begin to stick
- 2 tbsp Butter
- 0.5 Onion, diced
- 3 clove Garlic, sliced
- 2 tbsp Fresh thyme, chopped
- 2 c cream, half & half, or vegan alternative
- salt & pepper

Directions

1. Follow instructions on your polenta packet or from Serious Eats as referenced in the video.
2. While it cooks, sear your mushrooms over VERY high heat and cook until browned.
3. Remove mushrooms, then cook onions & garlic in butter until soft.
4. Add thyme along with salt, pepper, and cream. Cook on low until reduce by half, then fold in mushrooms.
