- 2.5 cups Brussels sprouts, roughly chopped
- 1 Shallot, medium, chopped
- 2 cloves Garlic, minced
- 0.5 c Sour cream, light or regular
- 4 oz Cream cheese, 1/3 fat (1/2 package)
- 1 c low-fat shredded mozzarella cheese
- 0.25 c Parmesan cheese, grated (plus more for topping)
- 0.25 tsp sea salt
- 0.25 tsp Ground black pepper

Directions

Instructions
1. Heat 1 tbsp olive oil in a skillet; sauté shallot and garlic until fragrant.
2. Add Brussels sprouts, salt, and pepper; cook until tender, then remove from heat.
3. In a bowl, mix sour cream, cream cheese, mozzarella, Parmesan, salt, and pepper. Stir in Brussels sprouts.
4. Grease the skillet with the remaining 1 tbsp olive oil. Spoon in the dip and bake at 375°F (190°C) for 11-13 minutes until hot and bubbly.
5. Serve with veggies, pita, crackers, bread, or tortilla chips. Enjoy!
