Ingredients

Cream Mixture
- 2 c Heavy cream
- 0.5 tsp Salt
- 2 tbsp Vanilla extract
Egg Mixture
- 6 Egg yolks
- 0.333 c Sugar

Directions

Preparing the Cream Mixture
1. In a small saucepan, add 2 cups of heavy cream along with a pinch of salt and 2 tbsp vanilla extract.
2. Place on a low heat until you start to see steam but no simmering. We don’t want to scald the milk.
Preparing the Egg Mixture
1. In a separate bowl, take 6 egg yolks and whisk together with 1/3 cup of sugar until lighter in color.
Combining the Mixtures
1. Now combine the heavy cream a little at a time until combined while continually whisking so we don’t cook our eggs.
Preparing for Baking
1. Now add the mixture to your chosen oven-safe bowls/ramekins.
2. Sit them in a roasting pan and add boiling water until 1/4 to halfway up the ramekins.
Baking the Dessert
1. Add to an oven at 300F for around 40 minutes or until slightly firm but still jiggles. The size of your container will determine how long you need to cook them.
2. Allow to cool to room temperature and then cover and place in the fridge overnight.
Finalizing the Dessert
1. The next day, sprinkle sugar over the top and use a kitchen torch to melt and brown the sugar or under the broiler but watch carefully!
2. Let sit for 30 seconds to firm up and then crack the top and enjoy!
