Ingredients

- 4 Large eggs
- 1 c cottage cheese
- 0.25 c Milk
- 3 tbsp Maple syrup, plus more for serving
- 1 tsp Vanilla extract
- 1.25 c all-purpose flour
- 1 tsp Baking powder, aluminium free
- 0.5 tsp Cinnamon
- 2 tbsp melted butter
- fresh berries

Directions

Preparing the Pancake Batter
1. In a large bowl, whisk together eggs, cottage cheese, milk, maple syrup and vanilla extract until combined.
2. Sift in flour, baking powder, cinnamon and salt.
3. Whisk until the flour is incorporated.
4. Whisk in the melted butter, then let the batter rest for 10 minutes.
Cooking the Pancakes
1. When ready to cook, lightly butter a large skillet and set over medium heat.
2. When the skillet is hot, add the batter to the pan in about ¼ cup mounds, taking care not to crowd the pan.
3. Cook for about 2 to 3 minutes per side.
4. Repeat with remaining batter, adding more butter to the cooking surface as needed.
Serving the Pancakes
1. Serve warm topped with maple syrup and fresh berries.
