Ingredients

- 2 c cottage cheese
- 0.5 c Parmesan cheese, freshly grated
- 1 clove Garlic
- 0.5 tsp Salt, plus more for cooking pasta
- 0.5 tsp Black pepper
- 1 lb linguine
- 4 tbsp Unsalted butter, at room temperature
- 0.25 c Parsley, chopped fresh, optional
- Parmesan cheese, grated, optional, for serving

Directions

1. Add cottage cheese, parmesan cheese, butter, garlic, salt and pepper to a high speed blender and process until smooth to create an alfredo-like sauce.
2. Bring a large pot of water to a boil. Season it to taste with salt, then add linguine and cook until al dente.
3. Drain the pasta, but reserve about 1 cup of the cooking liquid. Return the pasta to the pot and add ‘Alfredo’ sauce and about ½ cup of the pasta water. Set over low heat and cook, stirring constantly, until the sauce is warmed and most of the liquid has been absorbed, about 3 minutes.
4. Remove from heat and garnish with parsley and grated Parmesan cheese, if desired, before serving.
