Ingredients

- 1 lb Jumbo shrimp
- 1 c Panko
- 1 c Shredded coconut
- 3 c Peanut Oil
- 2 Eggs
- 1 c Flour
- 1 c Sriracha
- 0.667 c Sugar
- 2 tbsp Fish sauce

Directions

1. Season the shrimp with your favorite spices. We used a smokey bbq seasoning blend. Wait about 30 minutes.
2. Mix panko with the shredded coconut and a tbsp of salt. Coat the shrimp in flour, then dip into, the beaten eggs, the coat completely in the panko and coconut.
3. Fry at 300F for 3-5 minutes or until golden brown
4. Combine sugar, sriracha, and fish sauce in a small sauce pan and bring to a simmer for about 10 minutes
