Ingredients

Shrimp
- 12 oz Shrimp, peeled, deveined, tail ON
- 0.5 c Flour
- 2 tsp Black pepper
- 2 tsp Garlic powder
- 2 tsp Salt
- 0.667 c unsweetened coconut flakes
- 0.333 c panko bread crumbs
- Avocado oil spray, or pam
- 2 Eggs, mixed for dredging
Dipping Sauce
- 1 serrano chile
- 1 Lime, juiced
- 0.25 c Honey

Directions

Preparing the Shrimp and Coating
1. Mix together your flour, pepper, salt, and garlic powder in a bowl.
2. In a separate bowl, mix together your coconut and panko.
3. In a third bowl, beat your two eggs together.
4. Coat shrimp in the flour mixture, then the egg mixture, then the panko/coconut mixture. Repeat until all shrimp are fully coated.
5. Evenly spread the shrimp out on the air fryer rack.
6. Spray with your avocado oil and cook at 400 for 3 minutes on each side.
Preparing the Dipping Sauce
1. While the shrimp are cooking, combine your honey, lime juice, and Serrano chilis for your dipping sauce.
2. Serve immediately.
