Ingredients

The Dressing & The Veggies
- 8 anchovy filets
- 2 clove Garlic, peeled
- 2 egg yolks
- 1 tsp dijon mustard
- 1 lemon
- 3 tbsp extra virgin olive oil
- 3 tbsp avocado oil
- 3 tbsp parmesan
- 0.25 c parmesan
- 3 heads of romaine
- 2 endive
- Kosher salt, to taste
- pepper
The Croutons
- 1 loaf or half loaf of any bread
- 3 tbsp extra virgin olive oil
- 3 tbsp parmesan
- 0.25 c fresh lemon zest

Directions

For the croutons
1. Preheat oven to 375°F.
2. In a large bowl, toss together bread, 3 tbsp olive oil and lemon zest.
3. Spread out on a baking sheet and grate parmesan over them.
4. Drizzle with another bit of oil and bake for about 15 minutes, until brown & crispy but not hard.
For the dressing
1. To make the dressing, combine anchovies and garlic in a mortar and pestle and smash to a rough paste.
2. Add lemon juice, egg yolk and dijon, whisk to combine.
3. Gradually whisk in avocado oil, followed by olive oil to help it emulsify.
4. Whisk in 3 tbsp of grated parmesan and season with pepper (and salt if needed)
To assemble the salad
1. To assemble, combine your veggies along with 2 couple cups of croutons and 3 tbsp of dressing.
2. Add shaved parmesan and mix together by hand.
3. Add more dressing and croutons if desired and garnish with more shaved parmesan.
