Ingredients

- 1 lb dungeness crab
- 0.5 lb squid, sliced into rings
- 1 lb cod
- 1 lb Jumbo shrimp
- 1 lb mussels
- 28 oz whole peeled tomatoes
- 16 fl oz Chicken stock
- 1 clam juice
- Red pepper flakes, to taste
- 1 Yellow onion, finely diced
- 2 Fennel bulb, finely diced
- 6 Garlic cloves, grated
- salt and pepper, to taste

- Lemon juice
- Sourdough bread, toasted
- 3 tbsp ghee, or olive oil
- 1 Red bell pepper, finely diced
- 8 oz Dry white wine
- 2 tbsp Dried oregano

Directions

1. Add shrimp shells to a pot with 8oz water, 8oz chicken stock, and a whole bottle of clam juice. simmer for 20 minutes the strain
2. Add your ghee (or olive oil) to a large heavy pot or dutch oven. Sautee onion, fennel, garlic, and bell pepper until completely soft
3. Add in white wine and reduce completely
4. Add in seafood stock and reduce about 25% then pour in the tomatoes and red pepper flakes and simmer for about an hour with the lid cracked
5. Add in your seafood all at once and once the clams open up, everything will be cooked perfectly
6. Serve in a large soup bowl with toasted sourdough and garnished with parsley, fennel leaves. Finish with a squeeze of lemon and enjoy!!
