Shrimp
- 10 Shrimp, medium to large
- 4 tbsp Butter
- 2 tbsp Olive oil
Salad
- 2 c Baby spinach, fresh
- 1 c Arugula, fresh
Salad Topping
- Corn
- Black beans
- Onions
- jalapeno
- cotija cheese
Cilantro Lime Vinaigrette
- Cilantro, a handful
- 0.25 c Red wine vinegar
- 0.5 c Olive oil
- 2 tbsp Honey
- 1 lime or lemon
- Kosher salt
Seasoning for Shrimp
- 2 tbsp creole seasoning
- 2 tsp old bay
- Kosher salt, a dash

Directions

Preparing the Shrimp
1. Peel and clean shrimp.
2. Butterfly shrimp by scoring down the back with a paring knife.
3. In a medium size skillet over medium heat melt butter and then add olive oil.
4. Add shrimp and cook for approximately 2-3 minutes or until done. Set aside.
For the Vinaigrette
1. In a container combine red wine vinegar, olive oil, honey, juice of one lime or lemon, cilantro and kosher salt.
2. Use a blender or immersion blender to mix well.
3. Taste your vinaigrette as you make it. Add more seasoning or citrus if you need to.
Assembling the Salad
1. Create your salad and drizzle your vinaigrette all over the top of it.
2. Top salad with cotija cheese and enjoy!
