Ingredients

Cake Ingredients
- 4 Large eggs, room temp
- 140 g White sugar
- 90 g All purpose flour
- 30 g Cocoa powder
Dark Chocolate Mousse
- 80 g Dark chocolate, chopped
- 80 g Heavy cream
- 80 g whipped heavy cream
Milk Chocolate Mousse
- 80 g milk chocolate, chopped
- 80 g Cream
- 80 g whipped cream
Syrup
- 0.5 c water
- 3 tbsp Sugar
Ganache
- 100 g Chocolate, mix milk and dark
- 75 g Cream
Glaze
- 75 g Dark chocolate, chopped
- 75 g Cream
- 2 tbsp corn syrup

Directions

Method
1. Preheat oven to 350F and line 2 9” baking pans.
2. Whisk eggs and sugar at high speed for 5-7min until light and thick.
3. Sift in cocoa powder and flour and carefully fold until just combined.
4. Divide equally between 2 pans and bake for 12 min.
For the dark chocolate mousse
1. First make ganache by heating the cream until it just starts to bubble and pouring over chocolate.
2. Cover and let sit for 5 min, then mix until shiny.
3. Whip heavy cream and fold into ganache once it’s a bit cooled down (15min).
4. Repeat for milk chocolate mousse.
5. Let everything cool for 30 min.
6. In the meanwhile make the ganache following same method described above, and let it cool.
For the syrup
1. Make the syrup by boiling water and sugar until syrupy.
2. Slice the 2 cakes into 2 halves each and start assembling.
3. Put one layer, brush syrup, cover with half of the dark chocolate mousse.
4. Keep repeating, alternating between dark and milk chocolate mousse.
5. Smooth edges and chill the cake for 15min.
6. Cover with the ganache and carefully smooth edges.
7. Cool as needed.
8. Make the syrup by making ganache and mixing until combined.
9. Add corn syrup and mix.
To glaze
1. Cake should be cool and glaze should be at room temp and runny (warm it slightly if not runny).
2. Pour over cake and smooth.
3. Let it cool for 15 min.
4. Enjoy!
