Ingredients

- 1 c water
- 5 tbsp Butter
- 1 tbsp Sugar
- 0.5 tsp Salt
- 1 c Flour
- 1 tsp vanilla
- 1 Egg, optional
- 0.75 c Sugar
- 2 tsp Cinnamon
- Dark chocolate
- Heavy cream, quantity depends on your preference

Directions

Preparing the Churro Dough
1. Place water, butter, vanilla, salt, and sugar in a pan and bring to a boil.
2. As soon as the mix comes to a boil, take off the heat. Add the flour and start stirring quickly using a wooden or rubber spatula. Do this for a minute until you see a smooth ball form that pulls away from the edges of the pan.
3. Leave the mix for about 5 minutes to slightly cool, then add the egg and stir it in until fully combined. Traditional churros don’t have eggs, but without egg they can be really tough to pipe! Feel free to skip it.
4. Transfer to a piping bag fit with a 1/2” French star tip. Pipe 6-7” churros onto parchment paper. You can fix imperfections with a slightly wet finger. Cut the paper so each churro has a strip of its own.
Frying and Coating the Churros
1. Mix sugar and cinnamon in a plate.
2. Heat oil to about 370F, then turn heat to medium and fry churros, 3 at a time, for 4-6 minutes until a deep golden color. You can drop them in with parchment and the paper will come off easily. They have a tendency to stick together but should separate when nudged.
3. Add churros to the cinnamon sugar while hot and stir to coat.
Preparing the Ganache
1. Make a ganache by pouring hot cream over chocolate, waiting 5 minutes, and stirring until combined.
2. Serve churros with ganache and enjoy.
