Ingredients

- 1 lb whole chicken wings
- 1 Tbs Pink himalayan salt
- 1 Tbs Black pepper
- 1 Tbs Garlic powder
- 1 Tbs Onion powder
- 1 tsp Granulated sugar
- 1 Tbs Soy sauce
- 1 tsp Shaoxing wine, or Mirin
- 1 tsp Sesame oil
- 1 Egg
- 0.25 cup Potato starch, or cornstarch
- Canola oil, for frying

Directions

1. Combine the seasoning, sauces, and wine with the chicken wings.
2. Add a beaten egg to the chicken and mix until well incorporated.
3. Add potato starch to the chicken wings and rub in until coated.
4. Heat oil to 325 degrees.
5. Fry chicken in batches at 325 degrees.
6. Fry the chicken for 2-3 minutes per batch.
7. Once the chicken is fried, place in the refrigerator and cover it for at least 2 hours.
8. Remove from the fridge and heat your oil to 375 degrees.
9. Fry your wings for 3-5 minutes or until it reaches an internal temperature of 165 degrees.
10. Season with a bit of salt once removed from the fryer.
11. Serve immediately!
