- 1 Onion, finely diced
- 2 clove Garlic, finely diced
- 2 jalapeños
- 1 tbsp Tomato paste
- 1 Sweet potato, peeled and cubed
- 2.5 cups pinto beans
- 1 tsp Smoked paprika
- 1 tsp Chili powder
- 1 tsp Cumin
- 1 tbsp Cacao powder, optional
- 0.5 tbsp agave
- 1.5 cups Tomato sauce
- 1 c stock or water
- 1 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
Garnish
- 2 jalapeños
- 1 c Cilantro leaves
- 1 Avocado, sliced
- tortilla chips
- Hot sauce

Directions

Preparation of the dish
1. Heat the olive oil in a pan over medium-high heat.
2. Sauté the onions with salt until they turn translucent, then add the garlic, jalapeños, tomato paste, and spices.
3. Cook for another minute.
4. Add the boiled pinto beans, cubed sweet potatoes, tomato sauce, soup stock or water, cacao powder, and agave.
5. Cover the pan with a lid and cook until the sweet potatoes are soft.
6. Be sure to stir every few minutes to prevent anything from sticking to the bottom of the pan.
Final steps and serving
1. Garnish with cilantro leaves, chopped jalapeños, avocado slices, and tortilla chips.
2. You can enjoy this dish with rice or just as it is!
