- Salt, to taste
- Pepper, to taste
Mango Quinoa Salad
- 0.25 c Quinoa, uncooked
- 1 mango
- 0.5 Avocado
- 0.5 Red pepper
- 0.5 Jalapeño
- 0.125 c Red onion, diced
- 0.25 Cucumber
- 0.5 Lime, juiced
- 0.125 c Cilantro, chopped
- Salt, to taste
- Pepper, to taste

Directions

Instructions
1. Prepare 1/4 cup quinoa according to package directions.
2. Add seasoning to salmon and bake at 450 for 10-15 minutes (time will vary depending on oven).
3. Mix all salad ingredients together (you don’t have to wait until quinoa cools).
4. Add salmon and top with a drizzle of honey, enjoy.
