Ingredients

Chicken Marinade
- 2 lbs Chicken thighs, boneless, skinless
- 0.75 c Brown sugar, tightly packed
- 1 tbsp Salt
- 1 tbsp Garlic powder
- 1 tsp chicken bouillon powder
- 1 tbsp Paprika
- 1 tsp White pepper
- 0.333 oz annatto powder
- 0.5 c Pineapple Juice
- 2 tbsp vinegar

Directions

Preparing the marinade
1. In a bowl, add all the ingredients together and mix until all the ingredients are well incorporated.
2. Cover with plastic wrap and let marinade in the refrigerator for 2 days.
Cooking the tocino
1. After 2 days the tocino is ready to cook.
2. Place the tocino in a pan and cover half way with water.
3. Cook on medium heat.
4. Once the water comes to a boil, add a little bit of oil, about 1/2 tablespoons worth.
5. Cook until the water has fully evaporated, and the chicken starts to fry.
6. Flip the chicken, and use it to pick up the fond that has accumulated on the pan.
7. Lower the heat and fry until it is fully cooked.
Serving suggestions
1. Cut into bite sized pieces, or serve whole.
2. Best eaten warm with garlic rice and a fried egg, or as a sandwich.
