Ingredients

Chicken
- 2 Chicken thighs, skin-on, deboned
- 2 tbsp Mirin
- 1 tbsp Dark soy sauce
- 1 tbsp Light soy sauce
- 0.25 tsp White pepper
Ramen Broth
- 6 cups Kettle & Fire Chicken Broth
- 1 inch Ginger, smashed
- 3 cloves Garlic, smashed
- 1 Scallion
- 0.25 tsp White pepper
For Each Bowl
- 1 pack ramen
- 0.5 tbsp Light soy sauce
- 0.5 tbsp Vegetable oil
- 0.125 tsp Sugar
- 0.125 tsp msg
- Salt, to taste
Optional Toppings
- marinated soy sauce chicken
- soft boiled egg
- sliced fish cake
- Scallions
- nori
- Sesame seeds
- togarashi seasoning

Directions

Marinating the Chicken
1. In a bowl, combine chicken thighs with mirin, dark soy sauce, light soy sauce, and white pepper.
2. Mix and let marinate for at least 1 hour.
3. Bake for 15 minutes at 400F or until the chicken reaches 165F internal.
4. Slice and set aside.
Preparing the Broth
1. In a pot, add 6 cups of Kettle & Fire Chicken Broth along with garlic, ginger, scallion and white pepper.
2. Simmer on medium heat for 20 minutes.
Preparing the Noodle Bowl
1. In a noodle bowl, add light soy sauce, vegetable oil, sugar, msg, and salt to taste.
2. Pour hot broth directly into the bowl.
Cooking the Ramen and Assembling the Dish
1. Cook your ramen noodles in water according to desired doneness.
2. Once cooked, drain well and add to your noodle bowl with broth.
3. Top with your marinated chicken, soft boiled egg, fish cake, scallions, nori, sesame seeds and togarashi seasoning.
4. Enjoy!
