Ingredients

Toasted Bread
- 8 slices Bread, your favorite
Homemade Green Pesto
- 1 c Cream cheese
- 0.5 c spring onion
- 3 tbsp Olive oil
- salt and pepper, to taste
Fried Chicken Breasts
- 4 Chicken breasts, boneless, skinless
- salt and pepper, to taste
- 4 tbsp Olive oil, for frying
Homemade Red Pesto
- 1 c sundried tomatoes
- 3 tbsp Olive oil
- 2 clove Garlic, fresh
- 1 c Basil leaves, fresh
- 0.5 c Parmesan cheese, grated
- 0.25 c cashew nuts
Mozzarella Cheese
- 1 c Mozzarella cheese, shredded
Fresh Arugula + Balsamic Vinegar Cream
- 2 c fresh arugula
- 0.25 c Balsamic vinegar
- 0.5 c Heavy cream

Directions

Toast the Bread
1. Toast the slices of bread until they are golden brown.
2. Set aside.
Homemade Green Pesto
1. In a food processor, combine cream cheese, chopped spring onion, olive oil, salt, and pepper.
2. Blend until smooth.
3. Set aside.
Fried Chicken Breasts
1. Season the chicken breasts with salt and pepper.
2. In a skillet, heat olive oil over medium-high heat.
3. Cook the chicken breasts until fully cooked and golden brown on both sides.
4. Set aside to cool slightly before slicing.
Homemade Red Pesto
1. In a food processor, combine sundried tomatoes, olive oil, fresh garlic, fresh basil, Parmesan cheese, and cashew nuts.
2. Blend until you have a smooth pesto.
Mozzarella Cheese
1. Preheat the air fryer to 200°C (390°F).
2. Place the shredded Mozzarella cheese in the air fryer basket and air fry for 8-10 minutes or until it becomes crispy and golden.
Fresh Arugula + Balsamic Vinegar Cream
1. In a bowl, mix fresh arugula with balsamic vinegar.
2. In a separate bowl, whip the heavy cream until stiff peaks form.
3. Gently fold the balsamic-arugula mixture into the whipped cream.
Assembling the Sandwich Stack
1. Take a slice of toasted bread and spread a layer of green pesto.
2. Add a slice of fried chicken on top.
3. Spread a layer of red pesto over the chicken.
4. Place another slice of toasted bread on top.
5. Add a layer of crispy Mozzarella cheese.
6. Top with fresh arugula and balsamic vinegar cream.
7. Finally, place another slice of toasted bread on top.
Serve
1. Repeat the process to create additional sandwich stacks.
2. Slice each sandwich stack diagonally and serve immediately.
