Ingredients

Chicken
- 2 lbs Chicken breast, finely diced
Seasoned Flour
- 2 c All purpose flour
- 1 tbsp Kosher salt
- 1 tbsp Black pepper
- 2 tbsp Garlic powder
- 2 tbsp Onion powder
- 1 tbsp Paprika, smoked
- 1 tbsp Italian seasoning
- 1 tbsp Basil
Egg Mixture
- 2 Large eggs
- 1.5 c whole milk, You may/may not need to use the entire amount depending on how thick/loose your sauce is
- 1 tbsp Hot sauce
- 1 tsp Kosher salt
- 1 tsp Black pepper
Bread Crumbs
- 2 c Italian breadcrumbs
- 2 c Panko breadcrumbs
- 1 tsp Kosher salt
- 1 tsp Black pepper
Bechamel Sauce
- 4 tbsp Unsalted butter
- 1 tbsp All purpose flour
- 1 c Milk
- 1 tbsp Garlic powder
- 1 tsp White pepper
- 1 tsp Parsley, fresh
Remaining Ingredients
- 1 jar pasta sauce
- 4 c Mozzarella cheese
- 1 box lasagna noodles

Directions

Preparing the Chicken
1. To a large bowl, add your seasonings to the flour and mix until well combined.
2. To another large bowl, add two eggs, milk, hot sauce, salt, and pepper. Mix until well combined.
3. To your next bowl, add your panko and Italian bread crumbs.
4. Add in the salt and pepper and mix until well combined.
5. Take your diced chicken bread and assemble, first adding to the seasoned flour.
6. Loosen any excess flour, then add to the egg mixture.
7. Using your dry hand, add the chicken to the seasoned bread crumbs and mix until fully coated.
8. To oil that's heated at 350 degrees, add your chicken.
9. Fry until perfectly golden brown and crispy.
10. Take the chicken and add it to a bowl pouring over some of your pasta sauce and a little bit of the cheese.
11. Set aside and let it cool.
Preparing the Bechamel Sauce
1. While the chicken cools a bit, prepare your bechamel sauce.
2. Add the cold butter to a pan.
3. Once the butter is melted, add your flour and whisk until the flour is dissolved.
4. Add in your milk a little at a time. Let it heat for a few minutes repeatedly whisking.
5. Add the white pepper and garlic powder to the mix and remove from the heat once it reaches its desired consistency.
6. Your sauce should look smooth and silky.
7. If it's too thick, add milk and whisk.
8. Add in the parsley.
Assembling the Lasagna Roll Ups
1. Grab a single sheet of lasagna noodles and layer with the bechamel sauce, then a few pieces of your chicken parmesan mixture.
2. Create your roll ups and place to the side until you have your desired amount.
3. Preheat your oven to 375 degrees.
4. To a large baking dish or casserole dish, layer the bottom with your remaining pasta sauce and mozzarella cheese.
5. Add your roll ups to the pan, then top with more mozzarella cheese, the bechamel sauce, and a final layer of mozzarella cheese. Top it off with grated parmesan cheese.
6. Bake for 30 minutes covered with foil and then remove the foil.
7. Bake for about 10-15 more minutes uncovered, finally broiling it for about 3-5 minutes until the top browns a bit more.
8. Garnish with parsley, serve, and enjoy.
