Ingredients

Chicken
- 1 chicken thigh
- 1 tbsp Shaoxing wine
- 1 tsp Salt
- 4 slices Ginger
- 2 stalks Scallions
Sauce
- 1 tbsp Garlic, finely minced
- 3 Thai chili peppers
- 1 tsp Sugar
- 2 tbsp Light soy sauce
- 1 tbsp Chinese black vinegar
- 1 tbsp Sesame oil
- 0.25 c Chicken Broth, reserved
Garnishments
- 2-4 tbsp chili oil
- peanuts
- Scallions

Directions

Preparing the Chicken
1. Add chicken to a pot of water along with Shaoxing wine, salt, ginger, and scallions.
2. Bring it to a boil and turn the heat to medium. Let it simmer for 20 minutes. (you can check if the chicken is cooked by poking it with a chopstick. If blood comes out, then it needs to be cooked more)
3. Turn off the heat, cover it with a lid and let it sit for 10 minutes. Save 1/4 cup of the chicken broth for later.
4. Transfer the chicken to an ice bath and let it cool completely, about 15-20 minutes.
Preparing the Sauce
1. Prepare the sauce by combining the listed ingredients.
Assembling the Dish
1. Once the chicken is cooled, cut it into small pieces. (Use a cleaver to help cut through the bone)
2. Plate the sliced chicken in a bowl and pour the sauce over it. Top it off with 2-4 tbsp chili oil, chopped peanuts, and scallion.
