Ingredients

Leftover Fried Rice
- 2.5 c White rice, cooked
- 1 c mixed vegetables
- 1 Onion, finely chopped
- 4 tbsp Butter
- 2 tbsp Oil, vegetable or sesame
- 3 Eggs
- 3 tbsp Soy sauce
- 2 clove Garlic, minced
- Salt
- Pepper
- Garlic powder
- 2 Chicken breasts, cubed (optional)

Directions

Instructions
1. Season cubed chicken with salt, pepper, and garlic powder.
2. Add 2 tablespoons of butter to a large skillet or wok over medium-high heat.
3. Add cubed chicken and cook 3-4 minutes on each side.
4. Remove chicken and add 2 tablespoons of oil.
5. Add minced garlic and chopped onions, sautéing until translucent.
6. Add frozen veggies to the pan.
7. Add eggs and scramble until cooked through.
8. Incorporate cooked rice into the mixture, breaking up any clumps.
9. Add butter, soy sauce, salt, and pepper, continuing to stir-fry until well combined.
10. Cook until the rice is slightly crispy, and the flavors meld together.
