Ingredients

Biryani
- 1 chicken
- 1 Shan Sindhi Biryani Mix
- 4 c Sella Rice
- 0.5 c Yogurt
- 1 fried crispy onion
- 1 golden sour prunes (Aloo Bokhara)
- 3 large potatoes
- 0.5 c Cooking oil
- 1 tbsp Ginger, crushed
- 1 tbsp Garlic, crushed
- 2 large tomatoes
- 2 large onions
- 1 c chopped cilantro
- 0.5 c chopped mint
- 1 Rani brand yellow coloring
- 1 c water
Raita (Green Yogurt)
- 1 c Cilantro
- 0.5 c Mint
- 2 green chili
- 1 clove Garlic
- 1 c Yogurt

Directions

For the Biryani
1. Take a large pan and add oil.
2. Once hot, add the onion.
3. Caramelize it and then add the meat and garlic/ginger.
4. Cook it until golden brown.
5. Then add the Biryani mix and yogurt.
6. Cook for 5 minutes and then add water and cook until 1/2 cup water is left on the bottom.
7. In a separate pot add water and whole spices (stick of cinnamon, 6 cloves, 1 black cardamom, fresh cilantro) to boil the rice.
8. It will make the rice aromatic.
9. Once the rice is 80% cooked, start layering the chicken.
10. Add boiled potatoes, fresh cut veggies along with sour prunes.
11. Then add the rice, fried onions and food coloring before putting the lid on to cook on low heat for 15 minutes.
12. Once it comes off the heat, fluff the rice and it’s ready to eat.
For the Raita
1. Add all the veggies in the blender and then add it to the yogurt.
2. To make the consistency runny, just add some milk.
3. Never add water or it will separate after some time.
