Ingredients

For the pesto
- 100 g Dried peas, cooked in water
- 1 clove Garlic, chopped
- 0.5 cup Fresh cilantro, washed and disinfected
- 0.5 cup Parmesan cheese, grated
- 0.5 cup Olive oil
For the baguettes
- 2 Chicken breasts, boneless and butterflied
- pinch salt and fresh black pepper
- 1 Tbs Olive oil
- 1 Baguette, quartered
- 1 Tomato, in thick slices
- 0.5 cup Red onion, sliced

Directions

For the pesto
1. In a food processor, mix all the ingredients except the olive oil and pulse to integrate. While it’s still blending, pour the oil slowly so it emulsifies and it has a lightly thick texture.
2. Place to the side.
For the baguettes
1. Season the chicken with salt and pepper and sear in a grill or hot pan for 5 minutes on each side or until it’s seared and cooked in the center; place to the side. Open the baguette in half and toast. Spread both halves with pea pesto and lay a tomato slice and onion on top. Slice the chicken and split it between the baguettes.
2. Share and enjoy.
Tip:
1. You can use the pesto in cold or hot pasta, just serve with your favorite pasta cooked al dente.
