Marinating the Chicken
1. In a medium bowl add cut chicken. Pour pickle juice over chicken and marinate in the refrigerator for 30 minutes.
Preparing the Coating
1. In a small bowl whisk together almond milk and replacement egg.
2. In a flat bowl mix together the dry ingredients and set aside.
Preheating the Air Fryer
1. Preheat air fryer to 365 degrees.
Coating and Cooking the Chicken
1. Remove the chicken from the refrigerator. Place each chicken piece individually into the dry mixture, into the almond milk/egg mixture, and back into the dry mixture making sure it is well coated, but excess is shaken off.
2. Place parchment paper on the air fryer rack and place chicken in a single layer.
3. Spray chicken with avocado oil until shiny.
4. Air fry for 15 minutes, flip chicken with tongs, spray with avocado oil and air fry for another 5 minutes.
5. Check temperature and continue to air fry checking every 2 minutes.
6. Once chicken has an internal temperature of 165 degrees it is done.
7. Do not over air fry chicken it will dry out the meat.
