Ingredients

Dough
- 1 tsp Granulated sugar
- 1 packet Active dry yeast
- 11 oz water
- 3.5 cups all-purpose flour
- 2 tsp fine sea salt
- 0.125 tsp cream of tartar
- 0.5 c Corn oil, plus 3 tablespoons
- 1 tbsp Unsalted butter, melted
Toppings
- 12 oz deli sliced part skim mozzarella
- 1 lb bulk Italian
- 1 28-ounce can whole San Marzano tomatoes
- 0.25 c Grated Parmesan

Directions

Preparing the Dough
1. Mix the sugar, yeast and room temperature water together and let yeast bloom for 15 minutes.
2. Add flour, cream of tartar and salt to a mixer and combine.
3. Once the yeast has bloomed, add it to the mixer and combine until dough forms then knead dough for about 90 more seconds.
4. Lightly oil a bowl then add in the dough, cover and proof for about 6 hours until it just about doubled.
Preparing the Toppings
1. Preheat the oven to 450 degrees.
2. Punch down the dough and let it settle for 15 minutes.
3. Season the crushed tomatoes with garlic powder, Italian seasoning, onion powder, and sugar.
Assembling the Pizza
1. Use 3/4 of the dough, save the rest for another use.
2. Spread the dough on the bottom and sides of a buttered springform pan or cast iron skillet.
3. Layer the cheese on the bottom then add the sausage edge to edge.
4. Grab the crushed tomatoes and use your hand to strain them and crush them.
5. Spread them over the sausage.
6. Top with Italian seasoning and grated Parmesan.
Cooking and Serving
1. Cook on 450 degrees for 25 minutes and let rest for 5.
2. Slice and enjoy.
