Ingredients

- 2 lb Cherry tomatoes, fresh
- 1 lb Spaghetti, can sub fettuccine or linguine
- 2 tbsp Olive oil
- 6 clove Garlic, grated
- 0.5 tsp Kosher salt
- 0.25 tsp Black pepper
- 1 tsp Thyme, or Italian seasoning
- 6 oz burrata, fresh
- 0.5 tsp Red pepper flakes
- 1 bunch Basil, fresh
- 0.75 c Parmesan cheese, grated

Directions

Preparing the Sauce
1. Heat olive oil in a nonstick skillet over medium-high heat.
2. Add grated garlic and sweat for 30 seconds, then add the fresh cherry tomatoes.
3. Season with kosher salt and pepper.
4. Saute the tomatoes over medium-high heat until the tomatoes blister and start to pop (about 5 minutes).
5. Use the back of a wooden spoon to break the tomatoes.
6. Add dried Italian seasoning and red pepper flakes.
7. Let reduce for 3-4 minutes until slightly thickened and season to your preference if needed.
Cooking the Pasta
1. Cook the pasta in salted boiling water until al dente.
2. Add drained pasta directly to the sauce along with a few tablespoons of pasta water over medium-low heat.
3. Mix until the sauce is well coated and add freshly chopped basil and Parmesan cheese.
4. Serve and enjoy.
