Ingredients

- 4 Zucchinis, shredded
- 2 Eggs
- 0.5 cup Bread crumbs, (or Panko)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 cup shredded cheese, (of choice)
- 0.5 cup Parmesan cheese
- Salt, (to taste)
- Pepper, (to taste)
For the Lemon Aioli
- 0.5 cup lite mayo
- 0.5 Lemon, juiced
- Lemon zest
- Black pepper

Directions

1. Shred zucchini and add to a bowl. Add 1 tsp of salt and mix together. Let sit for 20 minutes.
2. Add shredded zucchini to a towel or cheese cloth and drain out all of the water.
3. Add shredded zucchini to a bowl and add in cheese, eggs, bread crumbs and seasoning and
4. mix together until combined. Using a teaspoon, spoon out the mixture and form into tater tots.
5. Spray Airfryer with cooking spray and add tater tots to the Airfryer. Do not overcrowd. Bake for
6. 14-15 minutes at 350F degrees. Flip the tater tots half way.
7. Combine mayo, lemon juice, lemon zest and black pepper in a small bowl. Mix together and set
8. aside.
9. Remove tater tots from air fryer and let cool for 5 minutes. Plate and top with Parmesan cheese
10. and parsley. Serve with lemon aioli and enjoy!
