Ingredients

Kimchi Pancake
- 1 cup kimchi
- 1 Green onion, chopped
- 2 Eggs
- 1 tsp korean chili powder
- 1 cup All purpose flour
- 1 tbsp Gochujang
- 1 cup water
- pinch Salt
- 2.5 cup Mozzarella cheese, shredded

Directions

1. In a large bowl, add the kimchi, green onion, egg, chili powder, and flour. Whisk until well combined and smooth.
2. Add Gochujang and water to the bowl. Whisk until the batter reaches a smooth consistency.
3. Heat a non-stick pan or skillet over medium heat and spray or brush a thin layer of oil.
4. Ladle the batter into the pan and spread it evenly to create a big round shape.
5. Cook for 2-3 minutes until the bottom is slightly golden and crispy. Carefully flip the pancake and cook for another 2 minutes until the pancake is 80% cooked.
6. Reduce the heat to low then flip the pancake over one more time. Add a layer of shredded mozzarella, starting from the center of the pancake and leaving the outer 1.5” uncovered.
7. Cover the pan with a lid for 1-2 minutes until the cheese has completely melted. Turn off the heat after the first 30 seconds.
8. Slide the pancake onto a large serving or pizza platter and cut the pancake into 8 pieces with a pizza cutter. Drizzle teriyaki or okonomi sauce on top.
9. Repeat this process with the remaining batter.
10. Serve warm and enjoy.
