Ingredients

Main Ingredients
- 1 lb Ground beef
- 1 russet potato
- 1 gold potato
- 1 c Yellow onion, diced
- 8 clove Garlic, minced
- 1 tbsp green seasoning
- 1 tbsp Caribbean jerk seasoning
- 1 tbsp Butter, salted
- 1 tbsp Kosher salt
- 1 tbsp Black pepper
- 1 tbsp Garlic powder
- 1 tbsp Garlic powder
- 1 tsp Smoked paprika
- 1 tsp Italian seasoning
- 1 tsp Cayenne pepper
- 1 tsp beef bouillon
- 0.5 c beef broth
- 3 c pepperjack cheese
- 0.333 c Bread crumbs
- 1 tbsp Tomato paste
- 10 white cheddar cheese slices
- Oil, for frying
- 1 pack Goya empanada discs

Directions

Preparing the filling
1. In a heated medium saucepan, add your ground beef.
2. Cook until perfectly brown.
3. Remove the beef from the pan, draining it of any excess fat/natural oil.
4. Add the potatoes and cook for about five minutes.
5. After five minutes, add the butter and cook until brown and crispy.
6. Remove the potatoes from the pan.
7. Add the onion to the pan and cook until translucent.
8. Add garlic cooking for a few seconds and then add the beef and potatoes to the pan.
9. Mix until well combined.
10. Add seasonings, beef bouillon, jerk seasoning, and green seasoning.
11. Mix until well combined.
12. Add the beef broth and mix thoroughly.
13. Add the bread crumbs a little at a time until the mixture thickens.
14. Add tomato paste and stir into the beef and potato mixture.
15. Turn off the heat and add 1/3 of the pepperjack cheese.
Preparing the empanadas
1. In a large shallow pot or wide cast iron, add enough oil until it fills the pot about 2/3 of the way.
2. Take out your empanada discs and begin to assemble.
3. Add a slice of white cheddar cheese, a heaping spoonful of your empanada mixture, and a handful of pepperjack cheese.
4. Fold and crimp your empanada discs and put to the side until complete.
5. Once your oil reaches 350 degrees, cook your empanadas until perfectly golden brown.
6. Serve and enjoy!
