Ingredients

- 1 piece Prime rib with bone (approx. 3Kg)
- 2 Tbs Rock salt
- 0.5 cup Fresh rosemary, chopped
- 3 Tbs Thyme leaves
- 12 clove Garlic, chopped
- 0.5 Tbs Fresh black pepper
- 5 Tbs Olive oil

Directions

1. Place the prime rib on a baking tray and season with salt. Cover with plastic wrap and rest for 20 minutes so it’s room temperature, in case it was refrigerated.
2. Pre-heat your oven to 250°C/480°F.
3. In a bowl, mix the rosemary, thyme, garlic, black pepper and olive oil. Spread the rub over the meat, coating completely. Roast the prime rib for 15 minutes until you get an even browning all around. Lower the heat to 160°C/300°F and cook for 15 minutes for each Kg of meat. So if your prime rib is 3Kg, you should bake for approx. 1 hour and a half. Check with a meat thermometer half an hour before it’s ready. Remove from the oven once it reaches 55°C/135°F for a medium rare. Cover with foil and rest for 15 minutes before slicing.
4. Share and enjoy in your celebration table, with any side you like.
