Ingredients

Salad
- 0.5 cauliflower, head
- 1 Parsley, bunch, finely chopped
- 1 c Mint, finely chopped
- 1 c Cherry tomatoes, chopped
- 1 c Cucumber, cubed
- 0.5 Onion, finely diced
- 0.25 c Lemon juice
- 3 tbsp Extra virgin olive oil
- 1 tsp Sumac
- 1 tsp Cumin
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste

Directions

Preparation of Cauliflower
1. Remove the leaves from a head of cauliflower and chop it into small florets.
2. Pulse the cauliflower in a food processor a few times until it has a rice-like consistency. Be careful not to overprocess it, as this can turn it into mush.
Preparation of Onion and Other Ingredients
1. Chop up some onion and marinate it with salt and lemon juice in a bowl for a few minutes. This will help to tenderize the onion and give it a tangy flavor.
2. Add in the fresh herbs, along with the chopped tomatoes and cucumber.
Final Mixing and Seasoning
1. Mix in the cauliflower rice and season the whole salad with sumac, cumin, pepper, and olive oil.
2. Toss everything together well, and your fresh and flavorful salad is ready to enjoy!
