Cauliflower Mash
- 2.5 lbs cauliflower
- 0.5 Cream cheese, stick
- Salt, to taste (may need more at the end)
- 1 tsp Black pepper
- 0.25 c Heavy cream
- 1 tbsp Butter
- 2 tbsp Chives, diced
- 1 garlic bulb

Directions

Prepare Cauliflower
1. Steam or boil the cauliflower for 10-15 minutes until it's tender enough to slide off a fork.
2. If boiling, make sure to strain the water from the cauliflower to remove excess moisture. This is crucial for achieving a thick mash.
Blending
1. Place the steamed or boiled cauliflower in a food processor.
2. Add a pinch of salt, black pepper, heavy cream, cream cheese, and butter.
3. Blend until you achieve a smooth consistency. Be cautious not to overblend.
Add Roasted Garlic and Chives
1. Stir in the roasted garlic bulb (cut off the top, seasoned, and roasted) after blending.
2. Mix in 1-2 tablespoons of diced chives for added flavor.
Adjust Seasoning
1. Taste the cauliflower mash and adjust the salt if needed.
Serve
1. Spoon the cauliflower mash into a serving dish.
2. Optionally, garnish with additional chives or a pat of butter.
