Cauliflower Fritters
- 10 oz cauliflower florets
- 0.5 Onion, finely diced
- 2 clove Garlic, finely chopped
- 1 c Parsley, loosely packed, chopped
- 0.5 c Flour, adjust if needed
- 1 tsp Cumin
- 0.5 tsp Chili powder, optional
- 1 tsp Baking soda
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- Neutral oil, for frying
Vegan Egg
- 1 tsp psyllium husk powder
- 0.25 c water

Directions

Steam the cauliflower
1. Steam the cauliflower florets until soft.
Prepare the vegan egg
1. To make the vegan egg, mix 1 teaspoon of psyllium husk powder with 1/4 cup of water. Ideally, mix with a small blender to avoid clumps.
Mash the cauliflower and mix ingredients
1. Mash the cauliflower with a fork or pulse in a food processor a few times.
2. Move to a mixing bowl and add all the other ingredients, including the “vegan egg”.
3. Mix well and let it sit for a few minutes.
Shape and fry the patties
1. With wet hands, shape the patties.
2. Dust them with flour and fry them for about 2 minutes on each side until golden brown.
Enjoy your meal
1. Enjoy with a herbed plant-based yogurt sauce.
