Ingredients

- 0.25 cauliflower head cut in florets
- pinch salt flower and fresh black pepper
- 0.25 cup Olive oil
- 2 Tbs Lime juice
- 1 cup Parsley, washed, disinfected and chopped
- 1 Tomato, sliced and chopped
- 2 Green onions, sliced including the stem
- 0.5 cup Dried peas, chopped
- 2 Tbs Mint, washed and disinfected

Directions

1. Grate the cauliflower with a kitchen grater, you can also do this by pulsing in a food processor.
2. Transfer to a bowl, add salt, pepper, olive oil and mix to integrate. Add the rest of the ingredients and mix, carefully so it doesn’t turn mushy.
3. Serve in bowls, share and enjoy.
