Ingredients

- 1 lb Pasta
- 1 c Basil
- 2 c Spinach
- 0.333 c raw cashews
- 0.25 c Parmigiano reggiano, skip if vegan
- 1 c Extra virgin olive oil
- 1 tsp minced garlic
- 1 tbsp sea salt

Directions

For the pesto
1. In a blender or food processor, combine basil, spinach, cashews, Parmigiano, EVOO, garlic, and sea salt.
2. Blend until forming a paste, add more olive oil for a thinner consistency.
For the pasta
1. Cook pasta in salted water following the instructions on the package until reaching an al dente consistency.
2. Before draining, save a cup of pasta water for the pesto.
3. Stir together the pasta with the pesto and slowly add a little pasta water.
4. Mix and add pasta water until all the pasta is evenly coated and you reached a good consistency.
5. Serve with extra Parmigiano on top and some cracked black pepper.
6. Enjoy!
