Canned Salmon Melt
- 2 cans wild salmon
- 0.25 c mayo
- 0.5 Shallot, diced
- 2 tbsp freshly chopped parsley
- 1 tbsp stone ground dijon mustard
- 1 tbsp Fresh lemon juice
- salt & pepper
Bread-Tomato-Cheese
- Bread, of choice (I use Tuscan bread)
- 1 Tomato
- Cheese, I use Fontina

Directions

Instructions for Salmon Melt
1. Add all of the Salmon Melt ingredients into a bowl and mix together well.
2. On medium-medium high heat lay 1 side of your bread down in the pan (make sure the face down side has a little olive oil)
3. Put the salmon mixture along with your tomato & cheese down on the bread, top with the other slice of bread, press lightly for roughly 2 minutes.
4. Add a little more olive oil to the top side of the bread, flip it and press down for roughly another 2 minutes.
