Ingredients

Cheese Ingredients
- 8 oz Cream cheese, softened, room temperature
- 2 cups gruyère cheese
- 1 tbsp kewpie Japanese mayo
- 1 tbsp cajun seasoning
- 1 tbsp Parsley, fresh, chopped
- 1 tbsp Scallions, fresh, minced, about 2 stalks
- 1 tsp Worcestershire sauce
- 1 tsp Lemon juice, freshly squeezed
- few dashes Hot sauce, Louisiana
- 0.75 cup Breadcrumbs, white or white panko
Lobster Ingredients
- 1.5 lbs lobster meat
- 4 tbsp Butter
- 1 Shallot, minced
- 4 cloves Garlic, minced
- 1 tbsp tarragon
- 0.5 cup seafood stock
- 1 tsp Butter, melted, to drizzle on top on the lobster dip before baking/optional
- 1 tsp Apple cider vinegar, to drizzle on top on the lobster dip before baking/optional
- 0.5 tsp Paprika, to sprinkle on top on the lobster dip before baking/optional

Directions

Prepare the Cheese Mixture
1. In a large bowl combine all the cheese ingredients and set aside (DO NOT MIX YET).
Prepare the Lobster Mixture
1. In a large pan on medium heat, melt butter, add shallots, garlic, tarragon, and sauté for 1 minute.
2. Add the seafood stock, reduce to half.
3. Add the lobster meat, turn heat down to low and let the lobster meat soak up a little of the seafood stock for about 1-2 minutes (add a pinch of salt if desired). This will give the lobster just enough time for a quick cook before the oven bake.
Combine and Bake
1. Pour the wet lobster mixture into the large bowl with the cheese mixture and fold until combined and thickened.
2. Heat oven to 350 degrees.
3. In a medium sized cast iron skillet, pour the lobster dip into the skillet about ¾ up to leave room for any overspill. Pour melted butter and apple cider vinegar over the top.
4. Add the last layer of cheese, sprinkle with a little paprika and bake for approximately 30 minutes or until the cheese is golden brown on top.
Serving Instructions
1. Serve with crackers or toasted baguettes.
