Ingredients

- 1 tbsp Olive oil, plus more for serving
- 0.333 c Pine nuts
- Kosher salt
- coarse black pepper
- Dried oregano
- crushed red pepper flakes
- 2 tbsp finely chopped parsley
- 2 tbsp finely chopped basil
- 2 tbsp finely chopped chives
- 0.5 c softened unsalted butter
- 3 clove Garlic, grated or finely chopped
- 2 tbsp Parmesan
- 8 thick slices French or sourdough bread
- 8 oz burrata
- 6 oz sliced Mortadella

Directions

Prepare the pine nut mixture
1. Heat a medium skillet over moderate heat.
2. Once hot, drizzle in the oil and add the pine nuts.
3. Season with a pinch of salt, pepper, oregano, crushed red pepper flakes and half of the chopped herbs.
4. Cook, stirring often, for 1 minute.
5. Remove from heat and set aside.
Prepare the garlic butter toast
1. In a small bowl, mix together butter, garlic, pinch of salt, pepper, oregano, red pepper flakes, and Parmesan.
2. Slather both sides of each slice of bread with garlic butter.
3. Cook in a hot skillet, in batches, until golden brown on both sides.
Assemble the toast
1. Tear open the burrata and divide evenly among each toast.
2. Drizzle with olive oil and season with a pinch of salt and pepper.
3. Top with slices of Mortadella and the pine nut mixture.
4. Finish off with the remaining herbs.
5. Enjoy!
