Ingredients

Buko Pandan Pastry
- 8 oz buko
- 0.25 c Flour
- 2 tbsp Corn starch
- 1.5 c coconut water
- 0.25 tsp Salt
- 4 tbsp Unsalted butter
- 0.5 c Sugar
- 1 tsp buko pandan extract
- 2 puff pastry sheets
- 2 tbsp coconut flakes
- Mayonnaise, as needed

Directions

Preparing the Filling
1. In a pot, combine the flour, cornstarch, salt, and coconut water.
2. Cook on low heat until it starts to thicken, constantly stirring to ensure there are no lumps.
3. Once it has thickened, add the butter, sugar, and buko pandan extract.
4. Continue cooking until the butter is melted and the sugar has dissolved.
5. In a bowl, add the buko and the thick sauce, and mix until well combined.
6. Cover in plastic wrap, making sure the film makes contact with the filling.
7. Refrigerate for 1 hour.
Preparing the Pastry
1. While the filling is in the refrigerator, take the puff pastry out of the freezer to thaw.
2. Preheat oven to 375* F.
Assembling the Pastry
1. Once the pastry is thawed and the filling is chilled, it is time to assemble.
2. Lay out one sheet of pastry.
3. Top it with the filling.
4. Spread evenly, then top it with the other pastry sheet.
Creating the Christmas Tree Shape
1. Cut the pastry into a Christmas tree shape.
2. Scoring the dough first helps to make a symmetrical tree.
3. Once the tree is cut, cut slits on the sides of the tree all the way to the top, about 1 inch apart.
4. Do not throw away the scraps.
5. Cut them into strips and serve them alongside the Christmas tree.
6. When the slits are all cut, give them all a twist.
Baking the Pastry
1. Put a dollop of mayonnaise on the pastry and brush it all over, including the branches.
2. This works just like egg wash since mayo is mostly made of eggs.
3. Sprinkle with coconut flakes and bake for 25 -30 minutes, or until golden brown.
