Ingredients

Filling
- 0.5 Onion, finely chopped
- 1 bell pepper
- 3 clove Garlic, finely chopped
- 1 can Chickpeas, drained
- 0.5 tsp Cumin
- 0.5 tsp Chili powder
- 0.5 tsp Oregano
- 0.5 tsp Paprika
- 0.5 tsp Salt, adjust to your preference
- Black pepper, to taste
- 0.5 c Cilantro, finely chopped
Buffalo Sauce
- 0.25 c Hot sauce, I like frank's hot sauce
- 2 tbsp Tahini
- 1 tbsp Soy sauce
- 1 tsp Maple syrup
- 1 Lime, juiced
Other Ingredients
- 5 small tortillas
- 0.333 c Cheddar cheese, shredded, sub vegan if desired, adjust to your preference
- avocado crema
- 1 Avocado
- 0.5 c coconut or greek yogurt
- 0.5 c Cilantro, finely chopped
- 1 Lime, juiced
- Salt, to taste
- Black pepper, to taste

Directions

Preparation of Oven and Sauce
1. Preheat oven to 425 degrees.
2. Add all buffalo sauce ingredients in a bowl and mix until smooth.
Preparing the Filling
1. Heat oil in a skillet over medium heat.
2. Add onions and peppers, cook for 5 minutes.
3. Add garlic and cook for another 5 minutes.
4. Add chickpeas, spices, cilantro and sauce to the skillet.
5. Cook for 5 more minutes.
6. Turn off heat and partially mash.
Preparing and Baking the Taquitos
1. Heat tortillas for 30 seconds in the microwave until they are soft and pliable.
2. Add tortilla to a sheet pan lined with parchment paper.
3. Add filling to tortilla (about 2 tablespoons) and top with shredded cheese.
4. Roll tightly.
5. Repeat this for each taquito.
6. Bake taquitos for 12-15 minutes.
Preparing the Crema
1. If making crema, add all crema ingredients to a food processor or blender.
2. Blend until smooth.
Serving the Taquitos
1. Serve taquitos with optional sides of salsa and crema and enjoy.
