Ingredients

Syrup
- 1.5 cups water
- 2 cups Sugar
- Cinnamon, a few broken pieces
- 1 Lemon, juiced
Dough
- 2 cups yuca, shredded
- 1 cups dry white cheese
- 1 Large egg
- Oil, for frying

Directions

For the syrup
1. Combine water, sugar, and cinnamon in a saucepan and set over moderate heat.
2. Cook until the sugar has dissolved and the syrup has thickened with just a bit of color, 15 minutes or so.
3. Remove from heat and stir in the lemon juice.
For the yuca balls
1. In a large bowl, combine the yuca, cheese and egg until well mixed.
2. Form into 1 tablespoon balls and fry in hot oil, in batches, until golden brown and crispy.
3. Drain on paper towels and then coat in the syrup.
4. Enjoy!
